Favorite Dishes From Wales

Many of the dishes that are the pride of the United Kingdom actually come from Wales.  This is an area where the food is very fresh and organic. That is why the Prince of Wales loves living there; he is a gourmet at heart.

 

 

A signature dish is Welsh Cockle Pie. This is a pie that is ado from cooked fresh cockles that are gathered in baskets at low tide.

 

 

Trout wrapped in bacon in also a specialty and so is bacon that is boiled and then served with parsley sauce.  Many dishes, especially chicken pot pie also include bits of rashers in them.

 

 

Leeks grow in abundance in Wales and there are many dishes made with them.  Beautiful pies and flans are made with peas and leeks. Leek mousse is made out of butter, milk eggs garlic and leeks that have been sliced and washed.  The mousse is served warm from the oven after being unearthed from molds.

 

 

Salads are also made with a cheese that is special to the area called Caerphilly. This is Tomato and Caerphilly Salad.  This is a soft white cheese with a very salty taste. It is served with fresh herbs and sun-ripened tomatoes that have been tossed together.

 

 

Many dishes in this area are vegetarian. A very famous example is the Glamorgan Sausages. These are made of bread crumbs, leeks, chopped herbs eggs,  mustard powder, milk and Caerphilly cheese.  This mixture is molded into sausage shapes and fried in oil just like a regular sausage.

 

 

Welsh Fondue is also based on this unique dish. This consists of grated Caerphilly cheese, leeks, flours and butter that is melted down in a pot and then large cubes of crusty bread are dipped into the mixture.  People who cannot buy the special Caerphilly cheese in America will often try to replicate this dish using mozzarella or Scmorzel cheese. However citizens in the United Kingdom will say that there is nothing like the real thing!!

 

 

Another signature dish is Spicy Welsh Lamb.  Lamb is baked for hours with ginger, honey rosemary and dry cider.  It is a well-known and popular sweet and spicy entrée.

 

 

Another signature, meant to be served in hard times, is Welsh Faggots. These are pigs’ livers.  This is a stew made of the livers onions, beef suet, sage and beef-stock.  Sometimes you hear this dish called poor man’s goose or “savory duck.”
