More Famous Royally Named Foods
In Britain the name “Royal Icing” has real significance. It is the icing that was traditionally used to ice fruitcake. Fruitcake was the wedding cake of choice among all English royalty for generations. Royal Icing is also used to ice Prince Albert Royal Cake which is a buttery vanilla raisin cake spiced with sugar and cinnamon. In the case of the Prince Albert cake, only the top of the cake is iced and it is usually dotted with red maraschino or pickled Queen Anne cherries.
Similarly Albert pudding is a steamed pudding containing sultanas and candied citrus peel. It is made from Maida and drizzled with a jam sauce.
There is also an Albert sauce. This is a traditional sauce that consists of grated horseradish in a clear billion thickened with egg yolks, vinegar and prepared mustard.
A popular and more contemporary English dish is Duke of Cambridge Bay. This consists of potatoes, sausages (or veterinary sausages, crème fresh, garlic and a great deal of chili pepper and cheddar cheese. It is layerd in a pan like a casserole and seasoned with salt and pepper.
Another very royal dish is Cherries Jubilee. It is a dessert dish made from cherry and a liqueur (typically Kirshwasser). It is commonly served as a sauce over vanilla ice cream. Before it is served it is warmed by being set on fire. The alcohol soaked cherries catch the flame easily. Augusta Escoffier, a gourmet chef who prepared it for the Golden Jubilee of 1897, invented the dish. Since then there have been many interesting versions for he recipes served. Queen Victoria’s favorite soup is another big favorite. This consists of chopped chicken, chicken broth, sweet cream, bread crumbs, egg yolks, salt and pepper. The Queen of Puddings is also considered to be very royal. This is a pudding covered with a soft chewy meringue. The bottom layer is made from milk, sugar and breadcrumbs. This is layered with fruit and then topped with jam or fruit card and then the meringue. The pudding is browned in a hot oven so the meringue is very crispy and lightly browned.
