Unique Middle England Recipes
There are many different types of produce unique to Middle England and this has informed what goes in some of their best recipes. For instance, this part of England is very famous for it’s gooseberries.
With gooseberries galore in the region it is not uncommon at all to be served many different versions of gooseberry jam. Gooseberry jam comes in sweet, spicy and sour varieties. One delightful way that gooseberries are served in high-end restaurants is a gooseberry Yogurt Sorbet. Gooseberries are also made into a sauce and served with pork.
The area is also known for it’s many gourmet cheese farms and factories. A specialty is the Cheshire Potted Cheese, which is a recipe initially invented to get rid of cheese ends. Cheese is mixed with butter and spices and then beaten with sherry. It is pressed into small pots and refrigerated and then used later to spread on toast or crackers. Cheese pot spread is also traditionally served with celerity and fruit.
A famous cheese from the area is called Lymeswold. Lymeswold is served with wine on it’s own or in a Watercress Flan. It is a full fat soft blue cheese. It is mixed with spicy watercress greens and onions and then beaten with eggs. The entire thing is baked in a flaky crust and served warm.
Lymeswold cheese is also cubed, coated in egg and breadcrumbs and fried. It is then served on top of lettuce with redcurrant jelly.
Sage is grown in the area and the Oxford Sausages made in the area taste heavily of the herb. Sage Derby Souffles are a specialty dish made in the area that is French in origin. These souffles marble Derby Cheese (that has sage in it) with eggs, milk and flower to make a delicious dish that is to be also served with brown bread and butter.
Shrewsbury Biscuits are another famous treat from the area. These are light, lemony biscuits that are made savorier through the addition of caraway seeds or more dessert-like through the addition of caraway seeds.
Berries of all kinds grow abundantly in this area so red and black berry fools made of sponge cake and whipped cream are often seen favorite dessert offerings on menus and also on home dinner tables. Strawberries are combined with buttermilk and gelatin to make interesting molds that are served for dessert and also during English tea.
