Cooking in Packets! All the Rage in Britain …

In Britain, as everywhere else in the world, women are struggling to keep their weight off.  The craze in all the gourmet restaurants and also at home is to steam or bake very healthy meals in white parchment paper. White parchment paper is available everywhere in Britain, as this trend to cooking has become so popular.

 

A nice recipe is Mustard Chicken and Zucchini in packets. The chicken and zucchini are put in a packet along with banana peppers, whole grain msutard, cherry tomatoes, olive oil, thyme, salt, pepper and baked in the oven. When unwrapped you have a very healthy aromatic meal.

 

Any white fish works very well in a packet. Combine fish in foil packet (for grilling or baking) with red onions, olives, garlic, French Green beans and capers and then serve it on a bed of white cous cous. Delicious with a glass of white wine from a vine yard in the south of England.

 

Halibut or cod works really well in a packet if combined with green onions, cooked brown rice, sliced plums, minced ginger, orange juice, hoisin sauce and toasted sesame oil.

 

You can make a Moroccan style steak and sweet potato meal in a packet too. Place a strip steak, sweet potato’s, a red onion orange zest, canola oil, allspice, cumin, ginger, cinnamon, coriander, pepper and salt in a packet and put on a grill for about ten minutes until done. This exotic dish is very typical of the British love of delicious food.

 

Another delicious meal is Catfish with Tomatillo Salsa in packets. You can buy Tomatillo Salsa in specialty stores.  The British sometimes just chop up green tomatoes with onions, cumin, jalapenos, lime and cayenne.

 

Yet another wonderful combination has a bit of a Chinese flair. Mix Chinese Five Spice Powder with shrimp, corn, snaps peas and bell peppers.  Serve over quinoa or brown rice.

 

Another beautiful packet combination for fish is simply cut up escarole and rosemary that is basted in lemon butter. You could also use tarragon instead. Wrap the packet up with artic char or rainbow trout.

 

The movement towards cooking in packets is definitely a healthy counter-measure to some of the other foods people are famous for loving in Britain including the grease-soaked battered fish and chips, the deep fried Mars Bar and the sticky toffee pudding.
